Almerian Pork Parcels

 

A delightfully, indulgent, calorie-laden dish to impress you dinner party guests

Ingredients to serve 6:

  • 2 sheets ready-rolled puff pastry
  • 12 slices lean loin of pork
  • 12 fine slices Serrano ham
  • 1 rolled goats cheese
  • 1-2 large tomatoes
  • duck liver pâté
  • 3 medium eggs for egg wash

Method:

  • Pre-heat the oven to 200°C
  • Prep time 20 mins + cooking time 20 mins
  • Unroll the pasty and cut equally into 3 with a knife or pastry wheel
  • mark the centre of the strips light with you knife or wheel
  • lay a slice of Serrano ham on each strip on the half nearest you – make sure you have enough pastry to fold over at the end
  • top the ham with a slice of pork
  • cut 1 cm slices from the goats cheese roll and lay 2 on each piece of pork
  • place a second slice of pork on top of the cheese
  • spread a thin topping of pâté on the top of the pork
  • cut the tomatoes into 12 thin slices and place 2 on top of each parcel
  • lay a second slice of Serrano over the tomato
  • fold the pastry strips back towards you to encapsulate the filling
  • crimp the edges together with a fork
  • brush with the beaten egg wash
  • place in the bottom of the oven for 20 minutes or until golden brown
  • remove and serve or if for the freezer cool on a cooling rack and then freeze in individual freezer bags (you can re-heat easily after defrosting in a hot oven for about 15 minutes without burning the pasty and they are still delicious. not suitable for microwave re-heating.

  • finely slice three medium mushrooms
  • chop a good pinch of saffron
  • take a sauce pan or medium skillet
  • add a knob of butter and a drop of sunflower oil and melt
  • add a teaspoon of Dijon mustard and the saffron and stir
  • add the mushrooms and cook till soft
  • infuse a half glass of white wine
  • add double cram to suit
  • stir well and season to taste
  • reduce to the desired consistency and serve.
