Mediterranean King Prawns with Spanish Ham

Prawns Dish

Ingredients: (serves 2)
• 24 large cooked prawns (in Spain they are Langostinos)
• 100 grams (approx) diced Serrano Ham
• 2 rashers smoked bacon – cut into lardons (small strips)
• 5 cm piece of Courgette/Zucchini cut into julienne (small strips)
• 1 small onion diced
• 1 clove of garlic – slightly crushed
• Chopped/dried parsley
• Salt & Pepper to taste
• Lemon juice
• 500ml Olive oil

 
Method:
• Heat the oil in a deep skillet or wok
• Add the onion, courgette, garlic, ham and bacon
• Cook till the onion softens, the courgette should still be al dente
• Add the cooked, peeled prawns and stir in
• Add the parsley, seasoning and lemon juice and stir well
• Serve when the prawns are nicely heated through
• Great with fresh bread for mopping up the sauce
• Tuck in on a balcony overlooking the sea with a nice glass of something cold!
