Biryani Chicken with Salad in Egg and Ham Fajitas

Ingredients: makes 4

  • 1 chicken breast
  • biryani spices
  • lemon juice
  • mixed salad
  • dressing of choice
  • hand-cut boiled ham
  • parsley
  • salt & pepper


  • make a paste with the lemon juice and biryani powder
  • coat the chicken and allow to marinade for 20 mins + (the longer the better, but that will do)
  • cut the chicken into strips
  • mix your salad lightly with your favourite dressing (not too wet)
  • grill the chicken
  • beat one egg and add the finely chopped ham, chopped parsley & season with salt & pepper.
  • in a medium-large skillet make a thin one egg tortilla
  • turn out the egg tortilla and place some salad and a quarter of the chicken on the first third
  • roll carefully, slice in two and serve with whatever garnish you wish.

Makes a great starter or light lunch
