Ingredients: makes 4
- 1 chicken breast
- biryani spices
- lemon juice
- mixed salad
- dressing of choice
- hand-cut boiled ham
- parsley
- salt & pepper
Method:
- make a paste with the lemon juice and biryani powder
- coat the chicken and allow to marinade for 20 mins + (the longer the better, but that will do)
- cut the chicken into strips
- mix your salad lightly with your favourite dressing (not too wet)
- grill the chicken
- beat one egg and add the finely chopped ham, chopped parsley & season with salt & pepper.
- in a medium-large skillet make a thin one egg tortilla
- turn out the egg tortilla and place some salad and a quarter of the chicken on the first third
- roll carefully, slice in two and serve with whatever garnish you wish.
Makes a great starter or light lunch
