Caramelized Onion & Bacon Chutney with a Tomato Glaze
Ingredients:
- 1 medium onion
- 3 rashers of smoked bacon
- 1 ounce butter
- cooking oil
- 2 tablespoons honey
- 2 table spoons sugar
- 1 dessert spoon tomato sauce
- water
- Method:
- peel and ½ the onion
- slice finely from head to root
- dice the bacon
- heat a large non-stick frying pan or wok
- add the butter and oil (to stop the butter burning)
- when melted nicely add the onion and bacon
- stir well and fry till soft
- add the honey and sugar
- stir in and reduce until it starts to caramelize
- add the tomato sauce
- continue to reduce carefully stopping short of making toffee!
- add a little water – the mix should now be a beautiful golden brown
- cook out a little more until gelatinous, the consistency should be like a mango chutney or slightly loose marmalade
- reserve in a bowl or dish to cool
- when cold store in portioned pots or an old jam jar
This chutney or jam is delicious with pates and I love it on smoked salmon & cream cheese crackers!!
