Chicken, Ham and Mushroom Mini-Pasties


Ingredients: makes 20


  • 3 spring onion Bulbs finely chopped
  • 5 medium mushrooms – finely diced
  • 3 slices of good boiled ham finely diced
  • 4 rashers smoked bacon – finely diced
  • 2 chicken breasts – small dice
  • glass white wine
  • salt & pepper
  • chopped parsley
  • butter
  • cooking oil
  • 20 small pasty pastry rounds
  • eggs for egg wash



  • butter
  • 2 cups sieved flour
  • 400 ml cream
  • cajun spice
  • chopped parsley
  • 50g grated cheese



To make the sauce:

  • melt 3 – 4 large knobs of butter over a gentle heat
  • slowly add in the flour whisking continuously, alternating the pan on & off the heat
  • when the mixture starts to become stiff slowly start to add the cream.
  • continue whisking continuously and alternating between the heat and a cold surface
  • add the chopped parsley & cajun spice and whisk in thoroughly
  • add the grated cheese and stir in and allow to melt, again vary the whisking between hot and cold until you get to a nice semi-runny consistency –balance with cream (or milk if needs be)


To make the filling:

  • melt butter in a wok or large skillet with a touch of oil to prevent burning
  • add the onion & bacon and fry gently till softened
  • add the diced chicken and cook till well sealed
  • add the mushrooms and  continue to fry and stir
  • add the parsley and stir in
  • add the white wine and stir in and cook through
  • add the diced ham and stir in well to heat thoroughly
  • ladle in the sauce and stir until you have a nice fairly thick mixture
  • reserve & allow to cool
  • lay out the pastry rounds (shop bought or home-made if you area clever)
  • use 2 teaspoons to place a small amount of filling on to each pastry round
  • just off centre
  • fold closed, seal by pressing round the edges and brush with egg wash
  • place on a lightly greased baking tray in an pre-heated oven at 200°C and bake till golden brown (about 10-12 mins)
  • cool on a cooling rack or serve straight away.
  • can be frozen
