Ingredients: makes 4-6 portions:
- 6 peeled and pipped, chopped tomatoes
- 1 green, 1 red, 1 yellow & 1 orange sweet pepper
- 6 rashers smoked bacon
- 1 medium onion sliced
- 30ml tomato sauce
- glass white wine
- 1 l chicken stock
- salt & pepper
- chopped parsley & oregano
- butter & oil
- cream
Method:
- melt the butter with some oil in a stock pan
- add the onion
- add the peppers
- add the bacon
- cook till softening
- add the parsley and oregano
- mix well and cover on a low heat fo a few minutes
- add the tomatoes and any juice that drained from them
- stir together and add the tomato sauce – cook through
- season carefully – the stock will be seasoned
- infuse the white wine
- stir though
- add the stock and cover – simmer for 40 minutes
- remove from the heat and blend in the pan with a hand blender
- adjust the seasoning if necessary
- add the cream and blend in, check seasoning again
- serve or cool and store – can be frozen
