Ingredients: Serves 6-8
- 600g long grain rice
- 200 g sliced sausage
- 50g bacon sliced
- 1lg chicken breast in medium/small dice
- ½ red pepper sliced
- ½ green pepper sliced
- 1 medium onion or lg spring onion bulb sliced
- garlic and parsley
- cajun spices
- 1 ½ ltr chicken stock
Method:
- using a paella pan or very large skillet
- gently fry the onion peppers and bacon with the garlic and parsley until they start to soften
- add the rest of the meat and fry till sealed
- add the cajun spices and mix well
- add the rice (quantity depends a bit on the size of the pan, as with the stock)
- add the stock, stir well and allow to simmer until rice is well cooked and the stock is completely taken up
- the final dish should be nice and moist but not wet
