Lemon and Cinnamon Fruit Cake


  • 350g sieved flour
  • 2 sachets yeast powder/baking powder
  • 200g sugar
  • 100g butter
  • 5 lge eggs
  • 200ml cream
  • juice one lemon
  • ground cinnamon
  • 2 handfuls dried fruit



  • pre-heat oven to 180C
  • sieve the flour
  • add the yeast powder and cinnamon, mix
  • lightly flour and shake the fruit – cut smaller if a bit large or overly moist inside (this stops it sinking)
  • add the fruit to the flour
  • separately mix the butter and sugar
  • beat in the eggs, cream & lemon juice
  • add the flour mix a ¼ at a time and whisk into egg/butter mixture
  • pour into a well-greased 8” cake tin
  • place in oven for 50 minutes

Turn out and allow to cool at room temperature on a cooling rack


Serve with Tea or Gin Martinis – or whatever you wish!!
