Ingredients:
- 350g sieved flour
- 2 sachets yeast powder/baking powder
- 200g sugar
- 100g butter
- 5 lge eggs
- 200ml cream
- juice one lemon
- ground cinnamon
- 2 handfuls dried fruit
Method:
- pre-heat oven to 180C
- sieve the flour
- add the yeast powder and cinnamon, mix
- lightly flour and shake the fruit – cut smaller if a bit large or overly moist inside (this stops it sinking)
- add the fruit to the flour
- separately mix the butter and sugar
- beat in the eggs, cream & lemon juice
- add the flour mix a ¼ at a time and whisk into egg/butter mixture
- pour into a well-greased 8” cake tin
- place in oven for 50 minutes
Turn out and allow to cool at room temperature on a cooling rack
Serve with Tea or Gin Martinis – or whatever you wish!!
