Ingredients:
½ large spring onion bulb chopped finely
1 dessertspoon diced red pepper
1 dessertspoon diced green pepper
1 lime peeled & chopped
juice of 2 limes
zest of 1 lime chopped
2 dessertspoons chopped fresh coriander/ cilantro
2 dessertspoons chopped dried plums
1 tablespoon chopped fresh ginger
1 dessertspoon orange marmalade
2 tablespoons white sugar
½ glass white wine
Method:
toss the lime, ginger, plums and zest in butter
add the sugar and stir
when it starts to caramelize add the marmalade & zest
stir well and reserve
soften onion & pepper in another pan
add coriander/cilantro, infuse with ½ the wine
add the lime/ginger mix
stir well while reducing
balance the consistency with the rest of the wine
when the mixture has a nice chutney/jam texture reserve and cool
bottle and store in the fridge
This recipe only makes a small jarful – experiment with quantity & flavour balance before making a larger amount.
