Ingredients: (serves 2)
- 2 large pork chops (you can use loin steaks if you wish)
- 8 baby new potatoes
- 8 baby vine tomatoes
- ½ red bell pepper – sliced
- ½ green bell pepper – sliced
- ½ red onion – sliced
- salt and pepper
- 3 small cloves of garlic – peeled and slightly crushed
- mixed herbs
- 1 teaspoon whole grain mustard (mine was with horseradish!)
- red wine
- tomato sauce
- olive oil
Method:
- place the pork in an oven dish
- half the potatoes and add
- add the baby tomatoes whole
- add the garlic and mustard
- add the peppers and onions
- add salt and pepper and plenty of herbs
- add ¼ glass of red wine, a light drizzling of olive oil and about a cup of tomato sauce
- mix the ingredients a little and cover
- place in a pre-heated oven at 150°C for 1.5 hours +/-
- go for a crafty pint at the nearest pub J
- Remove from oven and serve – I felt the need to reduce the sauce a little so drained it off and reduced it in a pan and then poured over the plated dish but this is up to you.
