Ingredients:
- 1 smoked mackerel fillet
- 2 rashers smoked back bacon
- 8 baby new potatoes
- ½ red onion
- salt & pepper
- chopped parsley
- 3 -4 dessert spoons mayonnaise
- 2 teaspoons English mustard
- 1 dessert spoon Worcestershire sauce
Method:
- boil the potatoes still just cooked and allow to cool then half or quarter depending on size
- grill the bacon – not overdone roughly chop
- thinly slice the onion
- remove the bottom skin from the fish and shred
- mix in a bowl, add salt, pepper and chopped parsley
- separately mix the mayonnaise with the mustard and Worcestershire sauce
- combine the mixed dressing with the salad
- serve or put into containers and store in the fridge
NOTE: If you refrigerate it, allow to warm-up a little before serving to release the flavours.
