If you are from Southern states of the USA, I suspect you will hate this recipe and no doubt have your own, passed down from grandma!
This one came from a grandma too – an 80 year Jewish lady from NYC. It is the easiest, quickest way to get really good tasting fried chicken. My sincere apologies to Dixie!
Ingredients: serves 4
4 thin sliced chicken fillets
3 beaten eggs
spiced/herb flour mix
For the flour:
1lb/ ½ kg sieved white flour
8 ground chicken stock cubes
1 tablespoon ground white pepper
1 tablespoon cayenne pepper
2 tablespoons dried mixed herbs
mix well
Method:
cut the chicken in to strips
beat the eggs for egg wash
flour the chicken strips
coated in egg wash
flour again! This is very important to get the right texture & flavour
Fry in fairly deep fresh clean vegetable oil until floating and golden
Ideal to serve with the Spicy ribs and luxury potato salad and some coleslaw
